Celiac Disease can be characterized by an abnormal immune response to a protein fraction in wheat gluten and to related proteins in barley and rye. The reaction to gluten causes severe damage to the intestinal mucosa and subsequent malabsorption. The treatment for celiac disease is lifelong adherence to a gluten-free diet. Improvement in symptoms is often evident within several weeks, although mucosal healing can sometimes take years. The gluten- free diet eliminates foods that contain wheat, barley, and rye (sometimes also oats). Because many foods contain ingredients derived from these grains, foods that could cause damage are not always obvious If you were develop celiac disease, talk about measures you would take to ensure that you were not malnourished and also mention a few foods that contain “hidden gluten”. By describing a food- I’m not referring to pasta or bread, etc. I am more concerned about products that have hidden gluten in them and I’m going to leave it to you to figure out what those foods are and post about them.
