Celiac Disease DB I have very many close friends who have Celiac disease, so I am very passionate about this topic Things I would alter in my diet to not become malnourished is by mainly eating more proteinit Since the gluten free diet is very limiting anyway, I would want to make sure that my diet is for sure healthy, and that I am eating healthy protein such as specific meats. I would try to eat lamb, beef, bison, and goat These are very nutritious forms of meat. I also would have beans, almonds, and broccli more often as they are also forms of protein that really like and enjoy. Products that have hidden gluten include many processed meats, cream-based soups, many salad dressings and marinades (especially those with ingredients like malt vinegar and flour), and certain potato chips. Potato chips that may be flavored may have malt vinegar or wheat starch. There also can be hidden gluten in medications, supplements, and herbal formulas. Becoming gluten free would change my life tremendously. I love pizza, common cereals, lots of bread, and pasta. I would have to make so of my food gluten-free, which many involve removing a lot of my guilty pleasures out of my life. I also love to eat at restaurants, so I would have to ask if they have gluten-free options everytime I went out to eat.
